Today in the Cotswolds there is a new emphasis on combining local sourcing with international influences - and a new generation of star chefs working in a rural environment that ensures excellent resources. And, despite the fact that we have no coastline, the Cotswolds' concentration of fine hotels means that fresh fish are delivered daily from Cornwall and the South West.
